Vegetarian Indian Bbq – Tandoori Kebabs

SUMMER OFFICIALLY BEGINS TODAY!

Following on from our last recipe we want to provide you with more fantastic ideas and recipes. With barbeque season just around the corner it is time to try something new before you get fed up of eating the standard barbeque foods.

Here at ShopSpicy we have come up with a list of fantastic summer themed recipes using Indian spices, perfect for serving at your fabulous summer garden parties.

Vegetarian Kebabs – Tandoori

Ingredients

- 200g Paneer, Cubed

- 150g fried tofu puffs, Cubed

- 75g baby button mushrooms

- 150g Cassava, Cubed and boiled until al dente

Paste

- 5 Black Peppercorns

- 2 tsp Minced Ginger

- 1 inch Cassia Bark

- 1 dried Kashmiri Chilli

- 1 tsp Cumin Seeds

- 1 tsp whole coriander seeds

- 1 Star Anise

- The Seeds of 4 Cardamom Pods

- 3 Cloves

- 2 tsp cornmeal

- 6 tbsp Concentrated Tomato Puree

- 2 tbsp Muscovado Sugar

- Salt to taste

- Juice from 2 Lemons

- 3 Cloves Garlic, Crushed

- 1 tbsp plain Greek Yoghurt

How to make the paste:

  1. Add the peppercorns, ginger, cassia bark, Kashmiri chilli, cumin and coriander seeds, peppercorns, star anise, cardamom seeds, cloves and cornmeal into a dry frying pan and lightly toast the spices on a low heat. Do this for 3-5 minutes until aromatic.

  2. Then add the freshly roasted spices to a pestle and mortar and grind into a fine powder.

  3. In a blender, add the powder to the tomato puree, sugar, salt, lemon juice, garlic and yoghurt then blend until smooth (if needed add a table spoon of water)

Kebabs:

  1. Boil a pan of salted water and add the paneer and tofu then boil for 4 minutes on a gentle heat.

  2. Then drain. This will soften them up for the marinade.

  3. Gently coat the paneer, tofu, mushrooms and cassava with the tandoori paste and refrigerate for 1 hour to 24 hours depending on the time you have available.

  4. Add your marinated chunks to some skewers and place onto your barbeque. Turn them until they are mouth-wateringly charred and serve.

Note: You can add extra ingredients to the skewers such as peppers, onions and tomatoes. If you don’t fancy the vegetarian option, substitute the tofu for chicken breast chunks.
