SUMMER SALAD: Spiced Mango & Salmon Salad

It is summer season and we want you give you fantastic quick recipes you can whip out for you and your friends!

For this recipe we are making a simple salad which is great to have at a BBQ and also helps cool you down, especially in the gorgeous weather we have been having!

Fresh fruit works wonderfully in salads as it adds a juicy element that compliments the crunch of the salad leaves perfectly. Combined with spiced smoked salmon this dish is full of unique flavours.

A salad is perfect as an accompaniment or a starter.

Recipe

  1. 1 whole smoked Salmon

  2. 2 mangos chopped into chunks

  3. 1 red onion

  4. 1 rocket lettuce

  5. 1 fresh chilli

  6. Cucumber

  7. 1 teaspoon pepper

  8. 1 teaspoon turmeric

  9. 2 tablespoons white wine vinegar

  10. 2 tablespoons fresh orange juice

  11. Pinch of salt

Method

  1. Dice the mango and the salmon.

  2. Chop the rocket lettuce, and finely slice the red onion, and fresh chilli. Cut the cucumber into chunks (size of your choosing)

  3. In a separate bowl mix the orange juice, white wine vinegar, salt, turmeric, and pepper

  4. Then place the diced smoked salmon in the bowl and let marinate. Leave in the fridge for around 30 minutes.

  5. Whilst the salmon is in the fridge combine the vegetables and the mango in a large salad bowl.

  6. Finally add the salmon to the salad and serve. The beauty of the spicy salad is that there really are no limitations; you can try thousands of spice combinations, vegetable combinations and meat combinations – salads really are so simple to make.
